Fresh fruits and vegetables all in one bowl.

This has quickly become one of my family’s favorite things to eat. The overall idea is to bring in a lot of fresh ingredients that both look and taste amazing.

We generally have the following: quinoa, radishes, avocado, red pepper, corn (cut off the cob), tomatoes, edamame, cucumber, zucchini, and then a homemade mango/pineapple/jicama/serrano pepper salsa. You can eat this over lettuce as a salad or just on it’s own.

If you are looking for a break from the norm and ant something light and fresh – give this a try. It works well with chicken or steak, dressing or no dressing.
